Vege Rice
Another lazy weekend, another lazy dish, another lazy post.
Back in my hometown, it's called "chai pui" (vege rice). Not sure what others call it.
It's a simple, versatile dish, in the sense that any combination of ingredients can be used - vege, meat, seafood, mushroom, etc.
Stir fried the garlic and onions till fragrant, followed by the mince meat and anchovies. Added some nampla (fish sauce) for flavour, before dumping in everything else (chicken stock and veges).
When everything looked cooked, I cracked in an egg and gently mixed it in so that it formed
Finally, the mixture was thickened with some corn flour, and served over rice.
Looks a little unappetising in the photo. Too much green vege, too little of everything else. Could probably be more presentable if there was a balance of ingredients - less greens, more variety (baby corn, carrots, squid, fishballs, tofu, ... )
Nothing better than some cilli padi to complement the dish.

i don't think the photo was unappetizing... it looked ok. what was unappetizing was your description or "mucus-like strands". Now THAT is unappetizing.
