Baked Chillie Mushrooms, and other goodies...
I'll be away for the weekends, so I had to clear out the fridge of all foodstuff that might not last the week. This was what I had to dispose of:
* Angus beef sausages
* a piece of pork chop
* a tomato
* some chestnut mushroom
* some leftover pasta sauce
* an egg
The raw material itself was more than I would typically eat for a meal, so cooking up a dish to be eaten with rice or noodles was out of the question. No choice but to do it Mat Salleh style.
Marinated the chops with some oyster and soya sauce, pesto, and pepper. After letting it sit for about 15 minutes, it went under the grill along with the tomato cut in halves.
I had more fun with the mushrooms.
Cleaned and cut them into bite-sized chunks. Then, drizzled over some olive oil, lime, finely sliced chillies, chopped garlic, a little butter, and salt and pepper to taste.
Mixed them up real good, topped with some grated cheese, and wrapped them in foil to seal in the juices.
Baked the whole thing, along with the sausages, for about 30 mins at 190 degrees.
Baked Chillie Mushrooms!
Served with grilled chops and tomato, sausages covered in left-over pasta sauce, and a bull's eye.
Oh... and GONG XI FA CAI everyone!
