Salmon Curry

Got some salmon for a similar deal as the cod - cheap, but of cook-asap-or-else freshness.

I bought quite a lot too, almost half kilo. Best way to cook in bulk? curry loh..

A straight-forward dish - brahims fish curry mix, salmon, tomatoes, brinjals. Wanted to add some Lady's fingers too, but couldn't find.

As a side note, why all the 'curry'able veges all got so many names one???
* brinjal = eggplant = Aubergine = Garden Egg = Mad apple = berenjena = egg apple = patlican = melongene = melanzane = Guinea squash
* Lady's Finger = Okra = gumbo

Good thing about curry, it keeps long, and tastes better after a few days. In too many words than necessary, you end up with curry that has more fish taste, and fish that has more curry taste.

Been surviving on this dish for a couple of days now.

Great when eaten with just plain rice.

Even better when eaten with egg fried rice, and some vege side dishes.

The flat round pieces at the far end of the plate is deep fried cucumber a.k.a zuchini. Picked that recipe up from a friend. Amazingly simple. Just slice up some cucumbers, wipe them dry, coat with plain flour, and deep fry.

Supposedly, that method works for brinjals too, but only the asian variety. The american or italians ones are sponge-like and can cannot be deep fried straight or it will soak up all the oil like, well, a sponge.

The spongy versions need special treatment before cooking, something I learnt from one of the older Alton Brown's Good Eats episodes.

Will include on my future posts, if I don't screw it up. ;)

I miss my curry..Only bloody rich people cook their salmon with curry here in Msia..Usually it's treated as a fine cuisine..Ur a rich Malaysian abroad i guess..Haha

soon to rot cod/salmon is the cheapest fish i can find. half kilo of the salmon cost less than the price of a burger king meal. hhehee.. still by no means cheap if convert to RM, but relatively cheap.

Yeah, salmon head curry was invented by people overseas but nowadays even the fishmongers overseas got smart as they charge for the fish heads which they used to throw or give away free.

Yeah. I've been hearing quite often that Salmon head kari kepala ikan is the bomb! And cheap too.

Will try if i do come across the kepala.


apple5: The egg fried rice i cook is a very basic one. I make it when I'm eating overnight rice. Makes the rice nice and fluffy, compared to when reheating then in the microwave.

I typically fry some onions and garlic in butter, perhaps a little spring onions. Then the overnight rice. Stir it around till it's well heated.

Then, push the rice aside, add a little oil, and crack in an egg. Keep stirring the egg till it's slightly lumpy (but still watery), then mix it all up. You end up with some egg that coats the rice, and some visible pieces.

Depending on what i'm eating it with, I might season the rice with some salt or soya sauce. If the side dishes are already flavourful, I just leave the fried rice plain and unsalted.

My fish curry short-cut version one.. used Brahim's Fish Curry.

Just add water, fish, tomatoes and brinjal. If got lady's finger, even better! Got Papadum, out of this world!!
